Another 'niblet'

Whether you want to admit it or not, December is already almost over. Seriously, Christmas is literally right around the corner. And if you are anything like me, you’ve left most of your holiday shopping for the last minute. Which means you’ve left yourself roughly 5 days to buy presents for like 10 people.

Normally, any other year, that wouldn’t be an issue, but did you know that when you work about 80 hours a week, that doesn’t leave much time for shopping? Yeah…it leaves Sunday morning. Awesome.

As I was rushing out the door this morning to finish (start…) my Christmas shopping, I knew I would need something to eat. Behold, a super yummy, super easy, super fast breakfast taco/burrito thingy. I was able to whip this up in a matter of minutes, roughly the amount of time I needed for my hair to sit in a towel before blow drying it. It was the perfect amount of protein mixed with just enough carbs to keep me from flipping out at the bad drivers, slow checkout person, and massive crowds that were most certainly going to be at the mall.

This breakfast is great for those mornings you’re running late, or those mornings the only thing you want to do in snuggle in the arms of your one and only. Best savored with a glass of fresh squeezed (or Simply Orange) orange juice.

Super Speedy Breakfast Tacos

• 2 whole wheat tortilla shells
• 2 eggs lightly beaten
• 1 TBS salsa (I used extra hot)
• ~2 TBS browned breakfast sausage
• Shredded cheddar cheese (as much or as little as you want, I like a LOT)
• Cholula to taste
• Sour cream
• Cilantro for garnish

Scramble eggs over medium heat until cooked. While the eggs are scrambling, wrap the tortilla shells in a damp paper towel and microwave for about 15 seconds until they are warm and flexible. Place the eggs in the tortilla shells, top with cheese, sausage, salsa, sour cream, and Cholula. Garnish with cilantro and dig in!

My thoughts:
This is the second best way to start a morning off…use your imagination for the best way….especially if you know it’s going to be a hectic/stressful/annoying day. The spiciness from the salsa with the cool sour cream was simply amazing. And as I said before, it is a great combination of protein/carbs. Just enough of each to keep you full and in your ‘happy place’. Happy Holidays!
